Ingredients for the Vegetable Spaghetti Sauce
½ cup chopped onion.
1 clove garlic, minced
2 tablespoons olive oil or other oil
1 green pepper, diced
2 tablespoons chopped parsley
1 can (2¼ oz) sliced ripe olives (½ cup)
1 can (2 oz) mushroom pieces with liquid
1 can (28 oz) stewed tomatoes, cut up (3½ cups)
1 can or 6 oz tomato paste
1 teaspoon brown sugar
1 teaspoon Italian seasoning or 1 bay leaf
½ teaspoon sweet basil of oregano
½ teaspoon salt or to taste
How to make Vegetable Spaghetti Sauce
- Saute the onion and garlic in the oil; add pepper and saute 2 minutes longer.
- Add rest of the ingredients as they are prepared; simmer 30 minutes to 1 hour. Add water if necessary to thin during cooking. It is improved if cooked 1 day ahead of serving, as are most tomato dishes.
