Vegetable Spaghetti Sauce


Here is another vegetarian recipe that you can try at home for your vegan and vegetarian cooking. The vegetable spaghetti sauce can be served over whole-wheat spaghetti, beans, rice and oven fried eggplants. One of these should be combined with the vegetable spaghetti sauce and put into baking dish. These should be baked until heated through and flavors are blended


Ingredients for the Vegetable Spaghetti Sauce

½ cup chopped onion.
1 clove garlic, minced
2 tablespoons olive oil or other oil
1 green pepper, diced
2 tablespoons chopped parsley
1 can (2¼ oz) sliced ripe olives (½ cup)
1 can (2 oz) mushroom pieces with liquid
1 can (28 oz) stewed tomatoes, cut up (3½ cups)
1 can or 6 oz tomato paste
1 teaspoon brown sugar
1 teaspoon Italian seasoning or 1 bay leaf
½ teaspoon sweet basil of oregano
½ teaspoon salt or to taste

How to make Vegetable Spaghetti Sauce

  • Saute the onion and garlic in the oil; add pepper and saute 2 minutes longer.
  • Add rest of the ingredients as they are prepared; simmer 30 minutes to 1 hour. Add water if necessary to thin during cooking. It is improved if cooked 1 day ahead of serving, as are most tomato dishes.
  • Serve as advised in the first paragraph of this post.
