The health enhancing benefits in celery are  Vitamins B1, B2, B3, Bs, B6, C, E, K, beta carotene, biotin, folic acid; calcium, iron, magnesium, iodine, phosphorus, molybdenum, potassium, selenium, sodium, zinc and fibre. A member of the parsley family, celery can stimulate the kidneys and help to flush out the system.

The Greeks used celery as medicine before the it was adopted later in Europe as part of food. Celery is an anti-inflammatory. You can use celery in its raw form as a salad, as capsules mostly made from the seeds or as a juice. Due to its strong flavour it is recommended to use celery juice with other juices such as carrots. This combination helps to normalise the body's acid-alkaline balance by countering the acidity of the body. Most cancers would be prevented if we ate more of celery and other vegetables and fruits.
